Josef Chromy OAM escaped from war torn Czechoslovakia as a penniless 19 year old in 1950, he fled across minefields, evading soldiers and killer dogs, ultimately finding a new home in the lucky country. Harvests are collated from fine vineyards across the premiere viticultural precincts of Veneto. Grapes are crushed and treated to a term of cold settling for clarification, followed by inoculation to choice yeasts and controlled ferments at 16C to 18C. Upon completion, batches are assembled into the finished wine and bottled for a term of age before release.
Straw yellow hues. Floral bouquets, acacia blossom, mineral notes, slateyness and meal, persimmons and pear. An intense, exquisitely balanced palate, filled with the fruits of the orchard, apples, nashi and pear. Wonderfuly textural and pleasingly dry, its parched citrus intensity makes a wonderful match with white meats, egg recipes or terrines.
